Carter Robert Miller

Self-employed, I act as Director at my Independent Cacao Innovation and Research Center in Ilhéus, Bahia, Brazil, where I develop new technologies based on scientific principles, my unique 'know how' from personal hands-on experience with cacao and 'out of the box' thinking for the improvement of the post harvest processing of cacao fruit, their cocoa beans and other related foods. Cocoa bean quality depends on climate, soil and other aspects of the particular growing environment (terroir), variety (genetics- forasteros, nacional, criollos and trinitarios or Ocumare, Chuao, Guasare and Porcelana) and most importantly how the orchard is managed and the fruit is handled during and after harvest. Post harvest processing, curing (fermentation and drying) is by far the most difficult, problematic and least understood activity in the production of consistent, high quality flavor (flavour) and fine cocoa. Applying design science principles, I distill the post harvest of cacao fruit and cocoa beans to its basic elements and arrive at unique solutions that are as elegant in their simplicity as they are profound in their effect. Flavor and ingredient development, through my custom, scientifically redesigned curing methods (including entirely new & improved proprietary fermentation and drying - that I do myself), help chocolate manufactures exceed their most stringent quality demands. Regarding inteIlectual property concerns- I have recently filed a 2nd provisional patent application in the US & have regionalized my utility patent application in EPO & nationalized in Ecuador & Brazil. I am also filed in Venezuela. I have patent pending protection in countries constituting 70% of fine cocoa production & over 95% of fine chocolate consumption. I offer consultation, licensing of my 'know how' & patent pending technology, & other business ventures to innovative entrepreneurs & cacao growers, cocoa bean processors, artisan & fine origin chocolate & cocoa makers & chocolatiers in addition to cosmetic, nutraceutical, pharmaceutical & medical industries. B.S. in botany as well as M.Sc. & Ph.D.in horticulture.
