    Effects of Processing on Levels of Ipomeamarone in Products Made from a Provitamin A Rich Sweetpotato (Ipomoea batatas (L.) Lam) Cultivar, Descrição: Vitamin A deficiency is a major health concern among rural communities of Kenya. Vitamin A deficiency is particularly prevalent among pregnant mothers and pre-school children, rendering them more susceptible to diseases. Certain cultivars of sweetpotato are rich in provitamin A Beta Carotene. Utilization and consumption of these cultivars can address vitamin A deficiency, especially among rural and poor communities who cannot afford animal sources of vitamin A. However, sweetpotato has been associated with anti-nutritional compounds that may render widespread utilization and commercialization an unrealized goal. The most important of these compounds are lung and liver toxic furanoterpenoids, flatulence factors and trypsin inhibitors. Sesquiterpenoid furanoterpenoids such as ipomeamarone are of particular economic interest because they are toxins and can cause sickness and death in animals. Little research has been undertaken to establish the effect of processing on the levels of these sesquiterpenoid furanoterpenoids. This project therefore determined the effect of different processing steps on ipomeamarone levels in a popular sweetpotato cultivar (SPK 004) and its products.     Development and Dissemination of Technology for Production of Coconut Oil in Kwale, Descrição: Coconut is one of the most important tree crops in the coast region of Kenya. Coconut is regarded as a tree of life because of its numerous uses ranging from the nutraceutical virgin oil, madafu, activated carbon, coir, timber, makuti leaves to tender coconut milk, among others. The coconut industry in Kenya is potentially worth 3.2 billion per year. However, this potential has not been tapped and the coast region continues to be ravaged by poverty. Kenya imports billions worth vegetable oil that could be supplemented by coconut oil. The economy of the coastal region and the country could therefore be improved by developing and disseminating technologies for processing and value addition to coconut and its primary products. This project therefore proposes to develop and disseminate integrated technologies for the production of coconut oil and associated upstream and downstream products.     Establishment of a Mango Post Harvest Handling System and Processing Pilot Plant at Malindi, Descrição: Thousands of tonnes of mangoes go to waste every year in the coast region due to limited processing capacity. Malindi district produces over 8000 tonnes of mangoes every year. Another problem faced by the mango industry is the fluctuation in the quality of produce delivered to processing plants. Poor handling techniques and little effort in adhering to basic good production practises such as correct maturity/picking age, sorting, appropriate storage and transport has undermined the quality of produce delivered to processors. Through this project, KIRDI will therefore intervene by establishing a mango processing plant at Malindi with a capacity to process 8 tonnes of mangoes per day. KIRDI will also develop a post-harvest handling system for quality assurance.
