  IMPACTO AMBIENTAL DE SISTEMAS PRODUTIVOS INTENSIFICADOS SOBRE O CRESCIMENTO E QUALIDADE DA CARNE DE TOURINHOS NELORE E ½ ANGUS X ½ NELORE DURANTE A RECRIA E TERMINAÇÃO., Descrição: O presente projeto visa avaliar os impactos zootécnicos e ambientais dos dois sistemas de produção de tourinhos Nelore e ½ Angus x ½ Nelore, utilizando alimentos sem antibióticos promotores do crescimento animal e ingredientes dos suplementos alimentares que não competem com a alimentação humana. O experimento contemplará fases de recria (águas, de dezembro a maio) e terminação (seca, de junho a setembro). No sistema intensivo, os animais serão manejados em pastagem com adubação nitrogenada durante a fase de recria e terminados em confinamento convencional. No sistema semi-intensivo, os animais serão manejados em pastagem sem adubação nitrogenada durante a fase de recria e terminados em Confinamento Expresso®. Em ambos os sistemas, serão utilizados 44 tourinhos Nelore e 44 tourinhos cruzados (½ Angus x ½ Nelore), com peso corporal inicial médio de 290 kg na fase de recria. Após 155 dias, os animais iniciarão a fase de terminação (90 dias), onde os animais receberão o concentrado com a mesma composição (Sistema semi intensivo: pasto + suplemento; Sistema intensivo: confinamento (bagaço de cana-de-açúcar + concentrado). Todos os animais serão abatidos em frigorífico comercial.   EFFECT OF RUMEN ALKALIZERS AND BUFFERS ON PERFORMANCE AND DIET DIGESTIBILITY OF FEEDLOT STEERS, Projeto certificado pelo(a) coordenador(a) Telma Teresinha Berchielli em 05/08/2016., Descrição: Distillers grains (DG), a byproduct of the ethanol industry, is exceptionally high in energy and protein, and is an economical and practical alternative feedstuff. However, increasing inclusion of DG in beef cattle diets increases dietary acidity, which limits performance. A considerable portion of the digestible energy in DG is derived from fiber and digestion of that fiber may be limited by normal ruminal acid produced from fermentation of starch. Further, distillers grains itself is a highly acidic feed. Thus, rather than relieving ruminal acid load by replacing starch containing grains, DG increases ruminal acid load because it may carry substantial quantities of acidity (Felix et al., 2011). As such, ruminal fermentation of fiber in DG is likely inhibited by its inherent acidity and strategies to neutralize this acidity, such as alkali or forage addition, may benefit the animal. Dietary buffers are utilized widely on a commercial basis to ameliorate the detrimental effects of acidogenic, high concentrate diets; however, yield responses to buffers have been variable. Buffering agents that possess a pK above the typical ruminal fluid pH will act as alkalizing agents rather than simply as buffers to increase the resistance of the rumen to a change in pH. Beneficial effects may be noted from increased ruminal pH, regardless of whether an alkaline agent or a buffer is responsible. Compounds that increase buffering capacity of ruminal fluid enable the animal to maintain a more stable ruminal pH when faced with a diet-related or a fermentation-related acid challenge. We have demonstrated that addition of calcium oxide, calcium hydroxide, or potassium carbonate to the ration stabilizes ruminal pH, improves fiber digestibility, and enhances performance of feedlot cattle. However, the possibility that addition of alkaline compounds to the ration change the digestibility of the feed prior to consumption has not been explored. Alkaline treatments to enhance the nutritional value of low quality roughages for cattle have been recognized for decades (Berger et al., 1979; Klopfenstein, 1978; Chaundhry, 1998). Treatment of straws and stovers with anhydrous ammonia, sodium hydroxide, calcium hydroxide or other strong bases degrade a portion of the linkages between lignin and hemicellulose in the fiber in these roughages, thereby increasing the availability of the cell wall carbohydrates for digestion by the rumen microbes. It is unclear how soon this process may start, thus the objective of this study is to determine digestibility of feedstuffs at multiple time-points after treatment with alkaline compounds ? calcium oxide, calcium hydroxide, potassium carbonate, and calcium hydroxide + potassium carbonate.   ADITIVOS EM SUPLEMENTOS PARA NOVILHOS DE CORTE TERMINADOS EM PASTO NA ÉPOCA DAS ÁGUAS, Projeto certificado pelo(a) coordenador(a) Josiane Fonseca Lage em 19/02/2016., Descrição: O presente projeto de pesquisa visa avaliar e compreender os processos que ocorrem no rúmen, que irão influenciar o crescimento de tourinhos suplementados com aditivos em 0.3% do peso corporal, sendo terminados na época das águas. O experimento será realizado na Unesp/Jaboticabal em uma área de Brachiaria brizantha cv. Xaraés formada no início de 2009. A área é constituída de 12 piquetes experimentais de aproximadamente 2 ha. Serão utilizados 90 machos não castrados com aproximadamente 360 kg de peso corporal, da raça Nelore. Os animais passarão por um período de adaptação de 14 dias e após esse período 8 animais serão abatidos para servirem como grupo referência, para se obter o rendimento de carcaça inicial, estimando-se o peso de carcaça inicial, de forma a obter no final do experimento, o ganho de carcaça diário e o ganho de carcaça em relação ao ganho médio diário de peso. Os animais remanescentes (n=82) serão suplementados com suplemento com ou sem aditivos, sendo distribuídos em quatro tratamentos: controle - suplemento sem aditivo; suplemento + monensina; suplemento + virginiamicina; suplemento + monensina + virginiamicina. Serão avaliados os parâmetros nutricionais, ruminais e sanguíneos, as alterações na microbiota ruminal utilizando-se a biotecnologia molecular, a produção de metano, o ganho de peso, o ganho de carcaça, as características de carcaça e a qualidade da carne..   MATURAÇÃO EM VÁCUO E VIDA DE PRATELEIRA DA CARNE DE BOVINOS DA RAÇA NELORE ALIMENTADOS EM PASTO, Descrição: Objetiva-se neste trabalho comparar a qualidade da carne submetida à maturação em vácuo ou "display". Serão utilizadas amostras de carne provenientes de um grupo contemporâneo, sendo 40 animais da raça Nelore, não castrados com peso médio de 500 kg, que foram alimentados em pastagem até o final da fase de terminação. Amostras do músculo Longissimus serão retiradas da carcaça após 24h de resfriamento a 0 graus celsius. As amostras serão embaladas em vácuo e maturadas por 14 dias entre 0 a 2 graus celsius (n=40). Outras amostras provenientes dos mesmos animais serão embaladas em bandejas de isopor e envolvidas com filme plástico para avaliação da vida de prateleira (n=40).   EFEITO DA ESPESSURA DE GORDURA SUBCUTÂNEA SOBRE A QUALIDADE DA CARNE MATURADA DE NOVILHOS DA RAÇA NELORE, Descrição: O presente projeto visa avaliar a qualidade da carne maturada sob dois graus de acabamento de carcaça. Serão utilizados 14 animais da raça Nelore, machos não castrados, com aproximadamente 450kg de peso corporal e 18 meses de idade. A espessura de gordura subcutânea dos animais será avaliada ao inicio do período experimental. Serão escolhidos 14 animais com espessura de gordura subcutânea de 0-3 mm e 3-6 mm e quando se formarem dois grupos com o grau de acabamento desejado: animais com acabamento entre 3-6 mm (sete animais) e animais com acabamento entre 6,1-10 mm (sete animais), os animais serão abatidos. As dietas serão formuladas de acordo com as exigências dos animais e ofertadas na relação de 40% de volumoso e 60% de concentrado, sendo a silagem de milho a fonte de volumoso e o concentrado composto por milho, farelo de soja, uréia e suplemento mineral. Serão realizadas pesagens a cada 15 dias e avaliadas a espessura de gordura subcutânea com ajuda de unidade ultrassonográfica.   MATURAÇÃO DE CINCO MÚSCULO DA CARCAÇA DE NOVILHOS DA RAÇA NELORE, Projeto certificado pelo(a) coordenador(a) Telma Teresinha Berchielli em 21/02/2016., Descrição: Descrição: O presente projeto de pesquisa visa avaliar o efeito de diferentes períodos de maturação sobre a qualidade de cinco músculos da carcaça de novilhos da raça Nelore, terminados em confinamento. Quatorze machos não castrados serão utilizados, recebendo uma dieta com 60% de concentrado e 40% de silagem de milho. Após o período de confinamento, os animais serão abatidos e as carcaças refrigeradas por 24 horas, sendo desossadas e retiradas amostras dos músculos: Biceps femoris (picanha), Longissimus (contra-filé), Gluteus medius (alcatra), Semitendinosus (lagarto) e Trapezius thoracis (acém). Os cortes serão embalados à vácuo e maturados por 7 e 14 dias entre 0 a 2 graus celsius.
